\u00a0My initial thought was strawberry rhubarb pie or crisp. \u00a0I wasn&#8217;t having guests and I knew if I made either of those desserts I would probably consume most of the calories. \u00a0So I decided on bread and muffins. \u00a0I could easily freeze the bread (which doesn&#8217;t always stop my noshing) and the muffins would make a quick breakfast.<\/p>\n<p>I was intent on making this bread a bit healthier. \u00a0So I added and switched a few ingredients. \u00a0The rhubarb is the star making this bread moist and sweet with a bit of tartness. \u00a0You don&#8217;t have to add the topping as the bread is still good without it.<\/p>\n<p>&nbsp;<\/p>\n<p>BREAD INGREDIENTS:<br \/>\n\u2022\u00a0\u00bd cup of skim milk<br \/>\n\u2022\u00a0\u00bd cup of cream<br \/>\n\u2022\u00a01 \u00bd tablespoons of lemon juice<br \/>\n\u2022\u00a01 \u00bd cups of brown sugar<br \/>\n\u2022\u00a02\/3 cup of vegetable oil<br \/>\n\u2022\u00a01 large egg<br \/>\n\u2022\u00a02 \u00bd cups of whole wheat flour<br \/>\n\u2022\u00a0\u00bc cup of milled flax seed<br \/>\n\u2022\u00a02 tablespoons of wheat germ<br \/>\n\u2022\u00a01 tsp of salt<br \/>\n\u2022\u00a01 tsp of baking soda<br \/>\n\u2022\u00a02 cups of chopped rhubarb<br \/>\n\u2022\u00a0\u00bd cup of chopped walnuts (or pecans)<\/p>\n<p>TOPPING INGREDIENTS:<br \/>\n\u2022\u00a0\u00bc cup of brown sugar<br \/>\n\u2022\u00a0\u00bd teaspoon of cinnamon<br \/>\n\u2022\u00a01 tablespoon of butter<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<br \/>\n\u2022\u00a0Preheat oven to 325 degrees.<\/p>\n<p>\u2022\u00a0Grease two 9&#215;5 loaf pans or use muffin tins (I used one loaf pan and had 6 large muffins).<\/p>\n<p>\u2022\u00a0In a small bowl mix the milk, cream, and lemon juice&#8230; set aside for 10 minutes.<\/p>\n<p>\u2022\u00a0Mix together the brown sugar, vegetable oil, and the egg.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-967\" title=\"IMG00436-20120424-1600\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00436-20120424-1600.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00436-20120424-1600.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00436-20120424-1600-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022\u00a0Combine the dry ingredients, and then mix part of the dry ingredients into the sugar \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 mixture alternating with the milk mixture until all is combined.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-968\" title=\"IMG00438-20120424-1617\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00438-20120424-1617.gif\" alt=\"\" width=\"540\" height=\"405\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00438-20120424-1617.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00438-20120424-1617-300x225.gif 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022\u00a0Put into greased loaf pan or muffin tin.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-969\" title=\"IMG00440-20120424-1631\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00440-20120424-1631.gif\" alt=\"\" width=\"540\" height=\"405\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00440-20120424-1631.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00440-20120424-1631-300x225.gif 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022\u00a0Mix the next 3 ingredients and sprinkle the mixture over the unbaked batter.<\/p>\n<p>\u2022\u00a0Bake in the preheated oven for about 40 minutes for the bread loafs. It takes much less \u00a0 \u00a0 \u00a0 time for the muffins, approx 20 minutes.
