What can I say, I\u2019m Armenian, so cooking with lamb is like cooking with beef for most people. \u00a0I grew up eating leg of lamb, shish kabob, lamb chops, lamb burgers, stuffed peppers with lamb, a lamb soup, and I could go on and on. Today my family requested stuffed peppers. I love to pick a medley of colored peppers red, yellow, orange, \u00a0and green. I take my ground lamb and mix with the ingredients listed below. \u00a0Then I stuff each pepper about \u00be full with the meat mixture. \u00a0Cover with sauce and cook for approximately 45 minutes\u2026 until meat is cooked through. \u00a0The best thing about this meal is you have your veggies and meat so really it\u2019s a complete meal.<\/p>\n<p>&nbsp;<\/p>\n<p><em>Serves 4-6<\/em><\/p>\n<p>INGREDIENTS:<br \/>\n\u2022 2lbs of ground lamb<br \/>\n\u2022 1 cup of #1 grain Bulger<br \/>\n\u2022 \u00bd cup of finely chopped parsley<br \/>\n\u2022 1 small white onion finely chopped<br \/>\n\u2022 1 tbl of tomato paste<br \/>\n\u2022 Dash of kosher salt &amp; freshly pepper<br \/>\n\u2022 28 oz can of crushed tomatoes<br \/>\n\u2022 \u00bd cup of red wine<br \/>\n\u2022 White onion sliced in wedges.<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<br \/>\n\u2022 Preheat oven to 350\u00b0.<\/p>\n<p>\u2022 Cut the tops off the peppers and clean out any seeds, save tops.<\/p>\n<p>\u2022 Mix the next 6 ingredients and kneed with your hands. Stuff each pepper with\u00a0the meat \u00a0 \u00a0 \u00a0 mixture about \u00be full.<\/p>\n<p>\u2022 Place in a deep oven safe dish upright. Place onion slices between the peppers.<\/p>\n<p>\u2022 Mix tomatoes &amp; wine\u2026 then pour over peppers.<\/p>\n<p>\u2022 Place tops on peppers and cook in preheated oven for 45 min.
