{"id":898,"date":"2012-04-26T19:18:17","date_gmt":"2012-04-26T19:18:17","guid":{"rendered":"http:\/\/feastandflowers.com\/?p=898"},"modified":"2012-04-27T00:18:52","modified_gmt":"2012-04-27T00:18:52","slug":"recipe-lahmajoon-armenian-pizza","status":"publish","type":"post","link":"https:\/\/feastandflowers.com\/?p=898","title":{"rendered":"recipe: lahmajoon (armenian pizza)"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-905\" title=\"IMG00419-20120421-2023\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00419-20120421-20231.gif\" alt=\"\" width=\"720\" height=\"540\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00419-20120421-20231.gif 720w, https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00419-20120421-20231-300x225.gif 300w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><\/p>\n<p>Lahmajoon is really an Armenian pizza without cheese or tomato sauce.\u00a0 Growing up this was one of my favorite meals.\u00a0 I keep these in my own freezer for a quick snack or meal.\u00a0 My girlfriend and I had a long day working with clients and we stopped at the house for a quick &#8220;nosh&#8221;.\u00a0 I offered up the lahmajoon and the pizza idea sounded great to her.\u00a0 I quickly heated up one for each of us and we were on our way.\u00a0 My girlfriend loved the meal and was curious as to what was in it.\u00a0 I said &#8220;lamb&#8221; of course!\u00a0 Well she doesn&#8217;t eat lamb so she was surprised and slightly unnerved.\u00a0 What I didn&#8217;t realize was that 40% of Americans have never even tried lamb.\u00a0 Again this is a staple meat for my family.\u00a0 She survived her encounter and actually liked the lamb pizza!\u00a0 But for all of you who don\u2019t eat lamb you can make this with ground beef.<\/p>\n<p>I learned to make these from my grandmother.\u00a0 She would stack 6 together and freeze them.\u00a0 She would make about 50-60 so there was always food to serve.\u00a0 The morning started with getting the dough ready, then mid-morning we would watch her roll out the circle of dough so fast your head would spin.<\/p>\n<p>When she added the whole tomatoes to the meat mixture she squeezed them by hand, no food processor.\u00a0 The tomatoes became part of the luscious lamb that rested on the crisp flat bread.\u00a0 All the ingredients came from her garden so the peppers, tomatoes, parsley and onions tasted extra special.\u00a0 I also have added garlic and a pinch of red pepper flakes to the meat.\u00a0 Do not be tempted to add cheese&#8230; there is no need.\u00a0 I could eat lahmajoon for an appetizer, lunch or dinner.\u00a0 Usually I serve it with a big salad.\u00a0 This recipe does take some time but you can make a large batch, freeze a few&#8230; you won&#8217;t be disappointed.<\/p>\n<p>&nbsp;<\/p>\n<p>DOUGH INGREDIENTS:<br \/>\n\u2022\u00a04 \u00bd cups of sifted flour<br \/>\n\u2022\u00a01 \u00bd cups of luke warm water<br \/>\n\u2022\u00a01 package of yeast dissolved<br \/>\n\u2022\u00a01 tsp of kosher salt<br \/>\n\u2022\u00a0\u00bd tsp of sugar<br \/>\n\u2022\u00a0\u00bd cup of vegetable oil<\/p>\n<p>&nbsp;<\/p>\n<p>MEAT MIXTURE INGREDIENTS:<br \/>\n\u2022\u00a01 \u00bd lbs of finely ground lamb<br \/>\n\u2022\u00a01 large white onion finely chopped<br \/>\n\u2022\u00a0\u00bd cup chopped parsley<br \/>\n\u2022\u00a01 green pepper finely chopped<br \/>\n\u2022\u00a01 tsp cayenne pepper<br \/>\n\u2022\u00a01 small can tomato paste<br \/>\n\u2022\u00a01 14oz can of whole tomatoes<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<br \/>\n\u2022\u00a0Mix dough ingredients with sufficient lukewarm water to give a consistency slightly softer \u00a0 \u00a0 than pie dough.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-944\" title=\"IMG00400-20120421-1455\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00400-20120421-14551.gif\" alt=\"\" width=\"720\" height=\"540\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00400-20120421-14551.gif 720w, https:\/\/feastandflowers.com\/wp-content\/uploads\/IMG00400-20120421-14551-300x225.gif 300w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><\/p>\n<p>\u2022\u00a0Coat hands with vegetable oil and knead dough thoroughly for 12-15 minutes.
