(max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>I love s&#8217;mores but especially on the Fourth of July or any summer party around a fire pit!\u00a0 So, when I saw this recipe in an old cookbook, <em>&#8220;The Back in the Day Bakery Cookbook, <\/em>I had to try it! \u00a0This pie was a big hit with everyone who tried it\u2026 second helpings were required!!\u00a0 I used a deep pie dish so I tweaked the recipe a bit, but the credit goes to Cheryl &amp; Griffith Day and their amazing recipes!<\/p>\n<p>&nbsp;<\/p>\n<p>CHOCOLATE\u00a0CUSTARD\u00a0FILLING\u00a0INGREDIENTS:<br \/>\n\u2022\u00a02 cups whole milk<br \/>\n\u2022\u00a05 large egg yolks<br \/>\n\u2022\u00a06 tablespoons sugar<br \/>\n\u2022\u00a03 tablespoons cornstarch<br \/>\n\u2022\u00a01\/4 tsp fine sea salt<br \/>\n\u2022\u00a01 tsp pure vanilla<br \/>\n\u2022\u00a07 ounces of good bittersweet chocolate, melted<br \/>\n\u2022\u00a02\u00bd tablespoons unsalted butter, cut into cubes at room temp<\/p>\n<p>&nbsp;<\/p>\n<p>GRAHAM\u00a0CRACKER\u00a0CRUST\u00a0INGREDIENTS:<br \/>\n\u2022\u00a03 cups graham cracker crumbs<br \/>\n\u2022\u00a06\/8 cup packed brown sugar<br \/>\n\u2022\u00a012 tablespoons unsalted butter melted<\/p>\n<p>&nbsp;<\/p>\n<p>MARSHMALLOW TOPPING\u00a0INGREDIENTS:<br \/>\n\u2022\u00a06 large egg whites<br \/>\n\u2022 \u00bd tsp cream of tartar<br \/>\n\u2022\u00a01\u00bd cups sugar<br \/>\n\u2022\u00a01 tsp pure vanilla<\/p>\n<p>&nbsp;<\/p>\n<p>You will need a kitchen blow torch!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>GRAHAM CRACKER CRUST\u00a0DIRECTIONS:<\/p>\n<p>\u2022\u00a0Position rack on lower level and preheat oven to 350 degrees F.<\/p>\n<p>\u2022\u00a0In a medium bowl mix all the ingredients until\u00a0all is moistened.<\/p>\n<p>\u2022\u00a0Press mixture into the pie plate going up all the sides and bottom of the pan.<\/p>\n<p>\u2022\u00a0Bake for about 6-8 minutes until golden and let cool before filling.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4080\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/170712_125614_81.jpg\" DIRECTIONS:<\/p>\n<p>\u2022\u00a0Whisk the egg yolks, sugar, corn starch, and salt together in a heat proof bowl until thick and pale in color, set aside.<\/p>\n<p>\u2022\u00a0In a medium saucepan bring milk to a gentle boil.<\/p>\n<p>\u2022\u00a0Whisk about half\u00a0of the hot milk into the egg mixture, then continue to whisk in the rest in a steady stream.<\/p>\n<p>\u2022\u00a0Set the bowl over a medium saucepan of simmering water<em> (do not let the bowl touch the water)<\/em> and cool the yolk mixture whisking constantly until thick and glossy, about 7-8 minutes.<\/p>\n<p>\u2022\u00a0Remove the bowl from the heat and whisk in the vanilla and chocolate.<\/p>\n<p>\u2022\u00a0Let this set for 2 minutes to cool, then whisk in the butter until the custard is smooth and silky.<\/p>\n<p>\u2022\u00a0When cool, put it into graham cracker crust and cover and put in the fridge.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>MARSHMALLOW TOPPING DIRECTIONS\u00a0<em>(pay attention and keep whisking!!)<\/em>:<\/p>\n<p>\u2022\u00a0Put the egg white, cream of tartar, and sugar in a large heatproof bowl.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4082\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/170712_125614_80.jpg\" alt=\"170712_125614_80\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/170712_125614_80.jpg 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/170712_125614_80-225x300.jpg 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022\u00a0Set over a sauce pan of simmering water<em> (do not let the bowl touch the water)<\/em> and whisk constantly until sugar is completely dissolved and the egg whites are warm to the touch, 3-5 min.\u00a0 The mixture will appear pale and opaque.<\/p>\n<p>\u2022\u00a0To make sure sugar is dissolved rub the mixture between your fingers.\u00a0 If grainy then whisk some more!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4083\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/170712_125614_82.jpg\" alt=\"170712_125614_82\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/170712_125614_82.jpg 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/170712_125614_82-225x300.jpg 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022\u00a0Transfer the mixture to the bowl of a stand mixer fitted with the whisk attachment.<\/p>\n<p>\u2022\u00a0Add the vanilla and starting on low speed whip the egg whites gradually increasing the speed to high until the marshmallow topping is glossy and forms peaks, 6-8 minutes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" 100vw, 540px\" \/><\/p>\n<p>\u2022\u00a0You can fill a pastry bag and pipe the mixture on top of the chocolate pie or just loosely pile it on top making big luscious swirls!<\/p>\n<p>\u2022\u00a0Toast the topping lightly with a kitchen blow torch!<\/p>\n<p>&nbsp;<\/p>\n<p>This pie is best served the same day, but can keep covered for up to 3 days. \u00a0I prepared the crust and chocolate filling
