love them in everything.\u00a0 They add a bit of sweetness, subtle and nice change of texture.\u00a0 Both these recipes have currants in them so enjoy&#8230; use them as substitutes for raisins. \u00a0My plan is to make this chicken salad recipe and have it for lunch a few days during the week.\u00a0 But the day I make it\u2026 it&#8217;s gone! \u00a0The Kale salad lasts another day but I&#8217;m not sure they (my family) have discovered how good it is yet.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>CURRIED CHICKEN SALAD<\/strong><\/p>\n<p>This recipe is adapted from <em>&#8220;Cooking My Way Back Home&#8221;<\/em> by Mitchell Rosenthal.<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<br \/>\n\u2022\u00a0Four whole chicken breasts, skinless. \u00a0Prepare by either cubing or shredding chicken. \u00a0(You can poach and shred the chicken,\u00a0saute or grill.)<br \/>\n\u2022\u00a0\u00bd cup currants (soak in warm water for 6 minutes and drain)<br \/>\n\u2022\u00a02 medium apples, diced<br \/>\n\u2022\u00a0\u00bd large fennel bulb, diced<br \/>\n\u2022\u00a04 stalks of celery, diced<br \/>\n\u2022\u00a0\u00bd cup of mayonnaise<br \/>\n\u2022\u00a0\u00bd cup dry roasted cashews chopped<br \/>\n\u2022\u00a01\u00bd tablespoons of curry powder<br \/>\n\u2022\u00a02 tablespoons of lemon juice (I prefer meyer lemons)<br \/>\n\u2022\u00a0Salt &amp; pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<br \/>\n\u2022\u00a0When your chicken has cooled and it is cubed or shredded mix with above ingredients.<\/p>\n<p>\u2022\u00a0Mix and serve over mixed greens or on buns with greens. \u00a0Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1464\" title=\"KaleSalad\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/KaleSalad.gif\" alt=\"\" width=\"720\" height=\"960\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/KaleSalad.gif 720w, https:\/\/feastandflowers.com\/wp-content\/uploads\/KaleSalad-225x300.gif 225w\" sizes=\"auto, (max-width: 720px) 100vw, 720px\" \/><\/p>\n<p><strong>KALE SALAD<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<br \/>\n\u2022\u00a02 large bunches\u00a0of Tuscan kale<br \/>\n\u2022\u00a0\u00bc cup dried currants<br \/>\n\u2022\u00a02 tablespoons of pine nuts<br \/>\n\u2022\u00a01\/3 cup of shaved parmesan<br \/>\n\u2022\u00a02 tablespoons of rice vinegar<br \/>\n\u2022\u00a02 tablespoons of white wine vinegar<br \/>\n\u2022\u00a01\u00bd tablespoons of honey<br \/>\n\u2022\u00a0\u00bc cup of\u00a0extra virgin olive oil<br \/>\n\u2022\u00a0Salt &amp; pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<br \/>\n\u2022\u00a0Clean the Kale and chop do not use the stalks.<\/p>\n<p>\u2022\u00a0Place in a large bowl.\u00a0 Add the next three ingredients.<\/p>\n<p>\u2022\u00a0Whisk together the remaining items&#8230; vinegars, honey and olive oil.<\/p>\n<p>\u2022\u00a0Add salt &amp; pepper to taste.<\/p>\n<p>\u2022\u00a0Mix with Kale, currants and parmesan. \u00a0Ready to serve.<\/p>\n<p>\u2022\u00a0If you dress the kale it will last for a couple of days. \u00a0This is a great healthy side for a \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 meat entr\u00e9e, or serve with the chicken salad for lunch.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I am having a currant fixation&#8230;
