I was looking for an easy recipe to make that I could freeze if I had left overs. \u00a0My thinking was then I wouldn’t be tempted to finish the left over dessert. \u00a0So I have made variations of this recipe but the one below is out of a cookbook “Southern My Way” by Gena Knox, it’s her grandmother Dot’s recipe. \u00a0Of course brown sugar and butter made into a bar\u2026 there were very few left overs! Four bars made it into the freezer and were eaten several days later with a dollop of ice cream.<\/p>\n

INGREDIENTS:
\n\u2022 2 cups all-purpose flour
\n\u2022 2 teaspoons of baking powder
\n\u2022\u00a01 lb of light brown sugar
\n\u2022\u00a01 \u00bd\u00a0sticks of butter
\n\u2022 1 teaspoon of kosher salt
\n\u2022 2 large eggs
\n\u2022 1 \u00bd teaspoons of “good” vanilla
\n\u2022 1 cup chopped pecans
\n\u2022 \u00be cup of chocolate chips or butterscotch chips (optional)
\n\u2022 Preheat oven to 350\u02da<\/p>\n

DIRECTIONS:
\n\u2022 Sift dry ingredients together and set aside.<\/p>\n

\u2022 Melt butter and brown sugar in a large saucepan over a low heat till melted.<\/p>\n

\u2022 Let cool slightly then whisk in eggs and vanilla.<\/p>\n

\"\"<\/p>\n

\u2022\u00a0Transfer to a larger bowl and add in dry ingredients \u00bd cup at a time.<\/p>\n

\u2022 Fold in pecans and chips then pour into a greased (buttered) 8 \u00bd\u201d x 11\u201d baking dish.<\/p>\n

\u2022 Bake for 40-45 minutes until center is a bit gooey but somewhat set.<\/p>\n

\u2022 Let cool and then cut into squares\u2026 or whatever shape you prefer!<\/p>\n
