{"id":2985,"date":"2014-01-28T16:53:49","date_gmt":"2014-01-28T16:53:49","guid":{"rendered":"http:\/\/feastandflowers.com\/?p=2985"},"modified":"2014-01-28T16:53:49","modified_gmt":"2014-01-28T16:53:49","slug":"recipe-cranberry-apple-cake","status":"publish","type":"post","link":"https:\/\/feastandflowers.com\/?p=2985","title":{"rendered":"recipe: cranberry apple cake"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2991\" title=\"Cake2\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Cake21.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Cake21.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Cake21-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>Easy and delicious are the best words to describe this dessert.\u00a0 We were having another couple over for a very casual pizza &amp; chopped salad dinner and movie.\u00a0 I had picked up several flavors of gelato but just had that feeling that I needed something else to add to the dessert menu.\u00a0 (I am a lover of all things sweet!!!)<\/p>\n<p>I had these wonderful fresh cranberries that were frozen and I had wanted to use them&#8230; sitting on the counter were a bunch of honey crisp apples.\u00a0 So I Googled easy dessert recipes using my two fruits&#8230; Ina Garten&#8217;s &#8220;Easy Cranberry Apple Cake&#8221; appeared on my screen.\u00a0 I have included Ina&#8217;s recipe for you to follow, but I did add another 1\/2 cup of cranberries and an additional 1\/2 of an apple.\u00a0 I like the fruit and it worked perfectly filling up my deep-dish pie pan.<\/p>\n<p>I popped this cake in the oven only a few minutes before my guests arrived.\u00a0 The recipe took maybe 20 minutes&#8230; so fast, east, and I have to say, delicious!\u00a0 The cake was so good my guests took two helpings of dessert.\u00a0 I hope you try this recipe and let me know what you think.\u00a0 Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<\/p>\n<p id=\"ingredients\">\u2022 12 ounces fresh cranberries, rinsed and picked over for stems<br \/>\n\u2022 1 Granny Smith apple, peeled, cored, and diced<br \/>\n\u2022 \u00bd cup light brown sugar, lightly packed<br \/>\n\u2022 1 tablespoon grated orange zest (2 oranges)<br \/>\n\u2022 \u00bc cup freshly squeezed orange juice<br \/>\n\u2022 1-1\/8 teaspoons ground cinnamon, divided<br \/>\n\u2022 2 extra-large eggs, at room temperature<br \/>\n\u2022 1 cup plus 1 tablespoon granulated sugar<br \/>\n\u2022 \u00bc pound (1 stick) unsalted butter, melted and slightly cooled<br \/>\n\u2022 1 teaspoon pure vanilla extract<br \/>\n\u2022 \u00bc cup sour cream<br \/>\n\u2022 1 cup all-purpose flour<br \/>\n\u2022 \u00bc teaspoon kosher salt<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<\/p>\n<p>\u2022 Preheat the oven to 325 degrees.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2993\" title=\"Cake1\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Cake11.gif\" alt=\"\" width=\"540\" height=\"405\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Cake11.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Cake11-300x225.gif 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Combine the cranberries, apple, brown sugar, orange zest, orange juice, and 1 teaspoon of the cinnamon in a medium bowl. Set aside.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2988\" title=\"Cake3\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Cake3.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Cake3.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Cake3-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs on medium-high speed for 2 minutes. With the mixer on medium, add 1 cup of the granulated sugar, the butter, vanilla, and sour cream and beat just until combined. On low speed, slowly add the flour and salt.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2987\" title=\"Cake2\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Cake2.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Cake2.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Cake2-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Pour the fruit mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, covering it completely. Combine the remaining 1 tablespoon of granulated sugar and \u00b9\/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, until a toothpick inserted in the middle of the cake comes out clean and the fruit is bubbling around the edges.
