{"id":2846,"date":"2013-09-26T17:38:09","date_gmt":"2013-09-26T17:38:09","guid":{"rendered":"http:\/\/feastandflowers.com\/?p=2846"},"modified":"2013-09-26T17:38:09","modified_gmt":"2013-09-26T17:38:09","slug":"recipe-farfel-with-mushrooms-and-onions","status":"publish","type":"post","link":"https:\/\/feastandflowers.com\/?p=2846","title":{"rendered":"recipe: farfel with mushrooms and onions"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2872\" title=\"Farfel3\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel3.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel3.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel3-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>I made farfel with mushrooms for my husband for years because he had asked me to. \u00a0I wasn&#8217;t that excited about the side dish but it was delicious.\u00a0 I decided to use shiitake and cremini mushrooms which added to the flavor. \u00a0Another tip was to boil the farfel in chicken broth.\u00a0 My husband was happy, so that makes this another go-to side dish!<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<br \/>\n\u2022 12 ounce (2 to 2-1\/2 cups, depending on the size) farfel or egg barley, toasted<br \/>\n\u2022 4 ounce (1 stick) unsalted butter<br \/>\n\u2022 2 large (1 pound) yellow onions, chopped (about 2 cups)<br \/>\n\u2022 12 ounce (3\/4 pound) mushrooms (button, shitake, or cremini) sliced or chopped<br \/>\n\u2022 2 teaspoons kosher salt plus more to taste<br \/>\n\u2022 3\/4 teaspoon freshly ground black pepper plus more to taste<br \/>\n\u2022 1 large egg (optional)<br \/>\n\u2022 1\/4 cup soup stock, chicken or vegetable (optional)<br \/>\n\u2022 1 tablespoon unsalted butter (optional)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2873\" title=\"Farfel1\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel1.gif\" alt=\"\" width=\"540\" height=\"405\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel1.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel1-300x225.gif 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>INSTRUCTIONS:<br \/>\n\u2022 Bring a large pot of salted water (4 quarts water with 1 tablespoon kosher salt) to a boil.<\/p>\n<p>\u2022 Add the toasted farfel and cook until tender, about 10 minutes. Drain, but do not rinse.<\/p>\n<p>\u2022 In a large saucepan, heat the butter.<\/p>\n<p>\u2022 Add the onions and saut\u00e9 until translucent, 7 to 8 minutes.<\/p>\n<p>\u2022 Add the mushrooms, salt and pepper and continue cooking, stirring often, until the mushrooms have given off most of their water and the mushrooms and onions are soft, about 30 minutes.<\/p>\n<p>\u2022 Stir the farfel into the saut\u00e9ed mushrooms and onions adjust the seasoning with salt and pepper.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2875\" title=\"Farfel2\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel21.gif\" alt=\"\" width=\"540\" height=\"405\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel21.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Farfel21-300x225.gif 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Bake the farfel, stir in the egg and soup broth (if using).<\/p>\n<p>\u2022 Transfer to a greased 2-quart baking dish. You can store the farfel covered in the refrigerator at this point for up to 2 days.<\/p>\n<p>\u2022 Before serving, preheat oven to 350 degrees.
