and he was right.\u00a0 This is one of my new favorite side dishes&#8230; again very easy to make and a perfect time of year to use fresh tomatoes, cucumbers, and herbs from your garden or neighborhood farmers market.<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<br \/>\n\u2022 1 \u00bd cups Israeli couscous<br \/>\n\u2022 1 small shallot, finely chopped<br \/>\n\u2022\u00a0\u00bd cup extra virgin olive oil<br \/>\n\u2022 2 tablespoons (or more) fresh lemon juice<br \/>\n\u2022 1 English hothouse cucumber, unpeeled, seeded, and finely chopped<br \/>\n\u2022 3 cups cherry tomatoes (I like to mix up the colors)<br \/>\n\u2022 3 tablespoons of chopped fresh flat-leaf parsley<br \/>\n\u2022 1 tablespoon chopped mint<br \/>\n\u2022 Kosher salt &amp; pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<br \/>\n\u2022 Cook couscous according to package, drain.<\/p>\n<p>\u2022 Rinse with cold water and drain well.<\/p>\n<p>\u2022 Whisk shallot, oil, and lemon juice in a large bowl.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2741\" title=\"CousCous1\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/CousCous1.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/CousCous1.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/CousCous1-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Add couscous cucumber, tomatoes, parsley, and mint&#8230;
