{"id":2596,"date":"2013-05-17T22:02:27","date_gmt":"2013-05-17T22:02:27","guid":{"rendered":"http:\/\/feastandflowers.com\/?p=2596"},"modified":"2013-05-17T22:02:27","modified_gmt":"2013-05-17T22:02:27","slug":"recipe-pams-chopped-salad","status":"publish","type":"post","link":"https:\/\/feastandflowers.com\/?p=2596","title":{"rendered":"recipe: Pam&#8217;s chopped salad"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2638\" title=\"photo-(8)\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/photo-81.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/photo-81.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/photo-81-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>I make a salad almost every day and my recipe always changes depending on what&#8217;s in season and what I have in my vegetable drawer, fridge, and pantry. \u00a0I wanted this luncheon salad to be more like a chopped salad a bit of everything chopped so there was something special for everyone.<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<br \/>\n\u2022 2 large heads of butter lettuce, chopped<br \/>\n\u2022 1 head of romaine, chopped<br \/>\n\u2022 2 cups of arugula, stems removed<br \/>\n\u2022 4-5 ears of corn cooked (Fresh corn kernels used for salad.)<br \/>\n\u2022 8 pieces of thick bacon, cooked and cut into 1 inch pieces<br \/>\n\u2022 2 cups of cherry tomatoes, sliced<br \/>\n\u2022 4 Persian cucumbers, chopped<br \/>\n\u2022 1 cup of red peppers, chopped<br \/>\n\u2022 1 red onion, chopped (Can be served on the side.)<br \/>\n\u2022 1-\u00bd cup chopped nuts (sliced almonds, pine nuts, sunflowers seeds, walnuts, whatever you prefer)<br \/>\n\u2022 1-\u00bd cups of peas (I used frozen but kept them crisp not overcooked.)<br \/>\n\u2022 1-\u00bd cups of cheese (I served gorgonzola and feta on the side.)<br \/>\n\u2022 2 sliced avocados (This is the last item to cut and add.\u00a0 Use lime juice on slices to keep fresh.)<\/p>\n<p>I serve the salad in a large shallow bowl. \u00a0Starting with the lettuce and then strips of ingredients cover the top, surrounded on the lip of the bowl by avocado slices. \u00a0I served the onion and cheese on the side in small bowls surrounding the main salad bowl. \u00a0Be creative and use your own favorites&#8230; there are so many wonderful choices.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>CHOPPED SALAD VINAIGRETTE DRESSING RECIPE:<\/p>\n<p>This recipe serves 4-6 so I doubled this for the above salad as I was serving a group of 12.<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<br \/>\n\u2022 3 tablespoons of champagne vinegar<br \/>\n\u2022 1 tsp of Dijon mustard<br \/>\n\u2022 1 tsp of mayonnaise<br \/>\n\u2022 \u00bd tsp fresh garlic<br \/>\n\u2022 Dash of salt &amp; pepper<br \/>\n\u2022 \u00bd good olive oil<\/p>\n<p>Mix with an emersion blender&#8230; delicious!
