{"id":2529,"date":"2013-04-26T23:25:09","date_gmt":"2013-04-26T23:25:09","guid":{"rendered":"http:\/\/feastandflowers.com\/?p=2529"},"modified":"2013-04-26T23:25:09","modified_gmt":"2013-04-26T23:25:09","slug":"recipe-pappardelle-with-arugula-and-prosciutto","status":"publish","type":"post","link":"https:\/\/feastandflowers.com\/?p=2529","title":{"rendered":"recipe: pappardelle with arugula and prosciutto"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2532\" title=\"SpringPasta6\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta6.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta6.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta6-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/>This is a wonderful recipe in this months <em>Bon Appetit<\/em>.\u00a0 A light tasty pasta featuring leeks and arugula, two of my favorites.\u00a0 I served this with a simple but delicious piece of baked salmon.\u00a0 Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<br \/>\n\u2022 \u00bd pound pappardelle or fettuccine<br \/>\n\u2022 Kosher salt<br \/>\n\u2022 2 tablespoons olive oil<br \/>\n\u2022 2 tablespoons unsalted butter<br \/>\n\u2022 2 leeks, white and pale greens only, halved lengthwise, thinly sliced crosswise<br \/>\n\u2022 \u00bc cup chopped fresh chives<br \/>\n\u2022 2 teaspoons finely grated lemon zest plus more for serving<br \/>\n\u2022 1 bunch arugula, thick stems trimmed, leaves torn (about 4 cups)<br \/>\n\u2022 1\/3 cup finely grated Parmesan plus more for serving<br \/>\n\u2022 Freshly ground black pepper<br \/>\n\u2022 3 ounces prosciutto, torn into 1-inch pieces<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<br \/>\n\u2022 Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 2 cups pasta cooking liquid.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2535\" title=\"SpringPasta1\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta1.gif\" alt=\"\" width=\"540\" height=\"405\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta1.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta1-300x225.gif 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2537\" title=\"SpringPasta3\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta3.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta3.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta3-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Meanwhile, heat oil and butter in a large heavy pot over medium heat. Add leeks and cook, stirring often, until softened but not browned, 5-8 minutes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2536\" title=\"SpringPasta2\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta2.gif\" alt=\"\" width=\"540\" height=\"405\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta2.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta2-300x225.gif 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Add pasta, chives, 2 teaspoons lemon zest, and \u00be cup pasta cooking liquid. Cook, tossing and adding more cooking liquid by 1\/4-cupfuls as needed, until a glossy sauce forms that coats pasta, about 4 minutes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2533\" title=\"SpringPasta4\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta4.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta4.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/SpringPasta4-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Add arugula and 1\/3 cup Parmesan, season with salt and pepper, and toss to combine. Add prosciutto and toss again.
