This week I am spending a few days with a great group of women for yoga, cross country skiing, cooking, movies, wine, and conversation.\u00a0 I am forever grateful to our hostess Karen, as she has the amazing home we are so lucky to stay at and makes us all feel so welcome.<\/p>\n
Culvers was our stop to eat on the 6 hr trip up to this winter wonderland.\u00a0 We arrive and settle into our rooms and the kitchen.\u00a0 This group cooks!<\/p>\n

Whatever we bring, it’s easy and delicious\u2026 always a treat.\u00a0 The first night\u2019s dinner was Nancy’s salmon, saut\u00e9ed Swiss chard, and brown basmati rice\u2026 delicious!\u00a0 Then movie night and off to bed.\u00a0 We packed lunch for the next day, wonderful tuna fish sandwiches, Minneolas, apples, and a mix of dried nuts and fruit.\u00a0 It was the perfect mix to keep our energy up.<\/p>\n

After yoga and skiing, a quick grocery stop for wine, cheese, veggies, and crackers. \u00a0We listened to music, read, and relaxed.\u00a0 Then it was my turn to cook dinner. \u00a0I made easy brick chicken with an apricot, honey, mustard, and wine glaze.\u00a0 I also prepared the lemon asparagus risotto recipe that is already posted. \u00a0The girls made a salad and we were again toasting with wine, and enjoying the gift of friendship.\u00a0 Of course I added chocolate dipped brickle cookies for dessert.<\/p>\n

Today we headed out to a very cool shop “Northfield Cabinetry” to meet some talented craftsmen.\u00a0 Then off to another ski trail.\u00a0 Let me explain I love to ski, but I am not an athlete or someone who does cardio on a regular basis… though of course I should!\u00a0 So I ski for about an hour and stay back while the others ski for another hour.\u00a0 I am blogging and setting up for our indoor picnic lunch.\u00a0 Tonight it’s Barb\u2019s meatball and sauce with salad and garlic bread.\u00a0 This group never goes hungry.<\/p>\n
