a creamy tomato base with a hint of saffron and a bit of body added by the orzo.\u00a0 Make an adult grilled cheese with Gruyere or an aged cheddar and a thick crusty bread to accompany it.\u00a0 My family and clients keep asking me to make this soup.\u00a0 Some grilled cheese croutons thrown in also make it special.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<br \/>\n\u2022 3 tablespoons of \u201cgood&#8221; olive oil<br \/>\n\u2022 3 cups of yellow onions, chopped (approx. 2 large onions)<br \/>\n\u2022 1 tablespoon of minced garlic (approx. 3 cloves)<br \/>\n\u2022 4 cups of chicken stock, preferably homemade<br \/>\n\u2022 1 28 oz can of crushed tomatoes (Use San Marzano, it makes a difference!)<br \/>\n\u2022 1 large pinch of saffron threads<br \/>\n\u2022 Kosher salt &amp; Pepper to taste<br \/>\n\u2022 \u00bd cup of Orzo<br \/>\n\u2022 \u00bd cup of heavy cream<\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<br \/>\n\u2022 Heat oil in a large pan or Dutch oven over medium heat add onions and saut\u00e9 for 15 minutes over med low heat till golden brown.<\/p>\n<p>\u2022 Add the garlic and cook for another minute.<\/p>\n<p>\u2022 Now stir in the chicken stock, tomatoes, saffron, 1 tablespoon of salt, and 1 teaspoon of pepper.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1911\" title=\"TomatoSoup1\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/TomatoSoup1.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/TomatoSoup1.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/TomatoSoup1-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Bring soup to a boil then lower the heat and simmer for 15 minutes.<\/p>\n<p>\u2022 While waiting, boil the Orzo in a medium saucepan, use salt in your water. \u00a0Once water is boiling add orzo and cook for 7 minutes, the Orzo will finish cooking in the soup. \u00a0Drain and add to the soup.<\/p>\n<p>\u2022 Now add the cream 7 let soup simmer for about 10 more minutes,\u00a0continue to stir.<\/p>\n<p>\u2022 Serve with grilled cheese croutons&#8230;use Gruyere cheese or cheddar!<\/p>\n<p>&nbsp;<\/p>\n<p>Enjoy!\u00a0 This is a recipe by Ina Garten&#8230;
