This past weekend was an adventure in food and activity. \u00a0I spent the weekend with six couples that are all in better shape than me, but I kept up! \u00a0We could ski, paddle board, kayak, swim, water ski, bike, sail, hike… and read. \u00a0We all shared our cooking skills each assigned a night to make a meal. \u00a0This was my very favorite appetizer served by my friend Nancy. \u00a0At 5:30 every evening we met at the dock for appetizers, drinks, and eagle watching cruising the lake. What a treat this was, served with a variety of beers. \u00a0Enjoy!<\/p>\n

 <\/p>\n

INGREDIENTS:
\n\u2022 1 32oz bottle of low sodium V8 juice
\n\u2022 2 large fresh tomatoes, chopped
\n\u2022 2 celery ribs, finely chopped
\n\u2022 6 green onions, finely chopped
\n\u2022 1 green pepper, finely chopped
\n\u2022 1 yellow or orange pepper, finely chopped
\n\u2022 2 English cucumbers or 4 small pickle cucumbers, finely chopped
\n\u2022 \u00bd cup of shredded\/chopped carrots
\n\u2022 \u00bd cup of ketchup
\n\u2022 2 tablespoons of Worcestershire sauce
\n\u2022 2 tablespoons of fresh lemon juice
\n\u2022 2 large 28oz cans of crushed tomatoes with juice
\n\u2022 Tabasco to taste
\n\u2022 Salt & pepper to taste
\n\u2022 Optional – 1\/3 cup of chopped cilantro or parsley<\/p>\n

DIRECTIONS:

\u2022 Mix all of the ingredients in an extra large bowl.<\/p>\n

\u2022 Let sit overnight in fridge.<\/p>\n

\u2022 Serve in individual “ball jars” with cooked shrimp and sour cream.\u00a0 Serves 12<\/p>\n
