{"id":1757,"date":"2012-08-13T20:45:30","date_gmt":"2012-08-13T20:45:30","guid":{"rendered":"http:\/\/feastandflowers.com\/?p=1757"},"modified":"2012-08-13T20:45:30","modified_gmt":"2012-08-13T20:45:30","slug":"recipe-tomato-cucumber-salad","status":"publish","type":"post","link":"https:\/\/feastandflowers.com\/?p=1757","title":{"rendered":"recipe: tomato &#038; cucumber salad"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1758\" title=\"Tomatoes1\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes1.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes1.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes1-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>I enjoy summer cooking for one simple reason&#8230; it is simple! \u00a0There is always something fresh in my vegetable bin after picking tomatoes from my small garden, fresh herbs and peppers, or all the other fresh veggies I cannot resist at the market.<\/p>\n<p>I usually don&#8217;t cook off of a recipe, that&#8217;s why I haven&#8217;t included a great many dinners I have whipped up at the last minute for a mid-week meal in this blog.\u00a0 I really don&#8217;t measure. \u00a0This simple but great tasting salad\/side is an example of cooking from the vegetable bin, on the fly! \u00a0I was out of lettuce but needed to make a veggie salad&#8230; what to do?<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1759\" title=\"Tomatoes3\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes3.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes3.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes3-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>I know I wanted to use the rest of the ripe sweet tomatoes and the mild Japanese pickle cucumbers.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1760\" title=\"Tomatoes2\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes2.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes2.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/Tomatoes2-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>I cut them both up in cubes and decided I wanted to finish off the Greek feta in the fridge.\u00a0 Then I roasted a few pine nuts because I love them. \u00a0I thought about adding fresh herbs but somehow the crisp mild cucumbers and sweet juicy tomatoes with the added crunch of the nuts and wonderful feta was all I needed. \u00a0I then added 2 cloves of chopped garlic, a drizzle of olive oil, and a splash of balsamic vinegar.\u00a0 Of course I add a dash of kosher salt &amp; ground pepper.<\/p>\n<p>This accompanied a grilled steak, twice baked potato, and fresh fruit. \u00a0So simple and easy with no need to go grocery shopping for the lettuce.\u00a0 This is how I cook, and most times when I&#8217;m using what&#8217;s in the pantry and fridge I discover my favorite combinations.\u00a0 Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I enjoy summer cooking for one simple reason&#8230; it is simple! \u00a0There is always something fresh in my vegetable bin after picking tomatoes from my small garden, fresh herbs and peppers, or all the other fresh veggies I cannot resist at the market.
