{"id":1677,"date":"2012-08-06T21:16:20","date_gmt":"2012-08-06T21:16:20","guid":{"rendered":"http:\/\/feastandflowers.com\/?p=1677"},"modified":"2012-08-06T21:16:20","modified_gmt":"2012-08-06T21:16:20","slug":"recipe-summer-peach-crostata","status":"publish","type":"post","link":"https:\/\/feastandflowers.com\/?p=1677","title":{"rendered":"recipe: summer peach crostata"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1683\" title=\"PeachCrostada3\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/PeachCrostada31.gif\" alt=\"\" width=\"540\" height=\"405\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/PeachCrostada31.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/PeachCrostada31-300x225.gif 300w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>It is the season for Red Haven Peaches and this recipe highlights their sweet and luscious taste. \u00a0The crust recipe is a butter crust I have used for years, it is also the same recipe that Ina Garten has in her Summer Fruit Crostata. \u00a0A butter crust can&#8217;t be beat in a fruit dessert, and I am a fan of all fruit desserts.\u00a0 You can make this recipe with blueberries, nectarines, plums, or apples.\u00a0 As the season changes so can the fruit.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>PASTRY CRUST INGREDIENTS (makes 2 crostatas):<br \/>\n\u2022 2 cups all purpose flour<br \/>\n\u2022 \u00bc cup of superfine sugar<br \/>\n\u2022 Dash of kosher salt<br \/>\n\u2022 2 sticks of cold butter, diced<br \/>\n\u2022 6 tablespoons of ice water<\/p>\n<p>&nbsp;<\/p>\n<p>FRUIT FILLING INGREDIENTS:<br \/>\n\u2022 6-7 large red haven peaches, peeled and sliced<br \/>\n\u2022 1 tablespoon of flour<br \/>\n\u2022 1 tablespoon of sugar<br \/>\n\u2022 \u00bd tablespoon of cinnamon<br \/>\n\u2022 \u00bc tsp of orange zest<br \/>\n\u2022 2 tablespoons of fresh squeezed orange juice<\/p>\n<p>&nbsp;<\/p>\n<p>TOPPING INGREDIENTS:<br \/>\n\u2022 \u00bc cup flour<br \/>\n\u2022 \u00bc cup of sugar<br \/>\n\u2022 4 tablespoons of cold butter<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>PASTRY CRUST DIRECTIONS:<br \/>\n\u2022 Combine dry ingredients.<\/p>\n<p>\u2022 Add butter till mixture resembles pea like crumbles.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1680\" title=\"PeachCrostada2\" src=\"http:\/\/feastandflowers.com\/wp-content\/uploads\/PeachCrostada2.gif\" alt=\"\" width=\"540\" height=\"720\" srcset=\"https:\/\/feastandflowers.com\/wp-content\/uploads\/PeachCrostada2.gif 540w, https:\/\/feastandflowers.com\/wp-content\/uploads\/PeachCrostada2-225x300.gif 225w\" sizes=\"auto, (max-width: 540px) 100vw, 540px\" \/><\/p>\n<p>\u2022 Add water.
